Today, I propose to you light, airy, and fluffy waffles, subtly flavored with vanilla and cinnamon. A basic recipe that is easy to make, using simple ingredients. It’s also a quick recipe since the batter does not require resting or rising time, but in the end, you get a superb result. You can serve them with the topping of your choice.
Candlemas is on February 2nd. After Christmas, New Year, and Epiphany, it’s time for pancakes to take their place in your kitchen. Here is a simple recipe with almond milk. This milk gives an incomparable creaminess compared to cow’s milk. They are not dry and are flavorful! I preferred to make them small because I find it more sociable, and we can have fun changing the fillings for more indulgence.
Here is my best recipe for sweet waffles. For the topping, I suggest some flavor combinations: Banana/dark chocolate/shredded coconut, Strawberries/vanilla with vanilla mascarpone, Raspberries/white chocolate, Citrus (2 tablespoons of zest in the batter, the segments will accompany the waffles).

When I have leftover egg whites, I never quite know what to do with them. My first attempts to adapt a pancake recipe to this ingredient were a bit bland… But I finally had the idea to enhance their flavor with sugar and cinnamon!!!
