A great recipe for cauliflower baked without béchamel! I don’t know about you, but I love cauliflower. I enjoy it raw as an appetizer, cooked and cold in vinaigrette, grated in salad, in casseroles, but also spiced and baked. I made a little variation by sautéing it with two beaten eggs like an omelet; it's perfect for dinner, and it allows some to (re)discover this beautiful vegetable that is cauliflower.

 1 Cauliflower
 2 Onion
 Olive oil
 1 pinch Salt
 1 pinch Freshly ground pepper.
 1 pinch Turmeric
 1 Coriander
 1 pinch Cumin
 1 pinch Curry
 1 pinch Paprika
 2 Beaten eggs in an omelette (for the variant)

And here we go! First, preheat your oven to 180°C, then cut your cauliflower into florets, slice the onions, and place everything in a mixing bowl. Add olive oil (3 or 4 tablespoons), the spices (for me curry, coriander, and turmeric), and mix well so that the onions and cauliflower are nicely coated; feel free to do this with your hands.

Place everything on a baking sheet lined with parchment paper, spreading it out in a single layer, season with salt and pepper, and bake for about 25 to 30 minutes or until it is nicely golden brown.

To finish For the variation, a complete evening dish or to use up leftovers: Beat two eggs into an omelet, place the cauliflower and onion in a pan, add the beaten eggs and let cook while stirring; this will give you more softness and it’s really excellent.
