Preparation of the ingredients Beat the egg in a shallow dish. Pour the instant polenta into another dish. Season the chicken fillets with salt and brush mustard on both sides.
Preparation of chicken fillets. Cut the fillets in half lengthwise and slice each half into 5 pieces, making a total of 20 pieces. Dip the pieces in beaten egg and then roll them thoroughly in the instant cornmeal. Set aside.
Cooking chicken fillets
Turn on the gas at low heat and pour oil into a large pan (100 ml). When the oil is hot, add 10 slices of chicken and brown them for about 2 and a half minutes on each side. Repeat the process with the other 10 slices.
