Today I offer you savory pancakes with zucchini and chives. A delicious appetizer, a savory breakfast, or a snack. It's easy and quick to make and very tasty. They are very soft and flavorful. These pancakes can be served warm or cold, on their own or accompanied by plain yogurt, crème fraîche, or your favorite sauce. They can also be topped with spreads or various toppings.
Prepare the zucchini. In a bowl, grate the zucchini with their skin. Add 0.5 teaspoon of salt, mix, and set aside for 30 minutes. The zucchini will release some of their water. After this time, drain them in a colander placed over a bowl.
Prepare the dough. In a bowl, whisk together the eggs, cream, 0.5 teaspoon of salt, and pepper. Add the garlic and chives and mix. Add the flour, baking powder, and mix well to achieve a smooth consistency. Finally, add the zucchini and stir with a spoon to incorporate.
Cooking Heat a pan over medium heat with 5 tablespoons of oil. When it is hot, drop spoonfuls of batter, one tablespoon at a time, leaving space between them. Cook for about 2 minutes on each side, until the pancakes are golden. Once cooked, transfer them to a plate. Repeat until all the batter is used. Add 5 tablespoons of oil before each batch. With these quantities of batter, I got 3 batches.
Serve warm or cold, as is or with fresh cream or yogurt. It's delicious!
