Mtewem is a traditional Algerian dish served during celebrations, especially during the breaking of the fast in Ramadan. Here is an easy recipe for mtewem in white sauce.
The day before, soak the chickpeas in water. On the same day, cook them for 1 hour in their soaking water. Drain. Set aside.
Peel and finely chop the garlic and onion. Cut the lamb into 2-3 cm pieces. Pour some oil into a sauté pan. Sauté the garlic and onion. Then brown the meat for 2 minutes on each side. Set aside.
Season the ground beef with salt and pepper. Add 2 teaspoons of cumin and mix. Then shape into meatballs and brown them in the skillet for 2 minutes on each side.
Finally, add the lamb, 2 teaspoons of cumin, the flour, and the cooked chickpeas. Cover with water and simmer for about 20 minutes. Serve with toasted almonds, chopped cilantro, and lemon wedges.
