Peel the shrimp, leaving the last ring of the tail. Set aside. Peel and then finely chop the shallot, onion, and ginger.
Pour the oil into a pan and gently melt the mixture of onion, shallot, and ginger. Pour in the white wine and let it boil to evaporate.
Add the mustard and the shrimp when there is only a tablespoon of white wine left. Mix. Sauté everything for two minutes over high heat.
Then add the honey and soy sauce and cook until the shrimp caramelize.
To finish, serve with reheated rice in a skillet or large bowl. Pour the shrimp and their sauce on top. Sprinkle with washed and chopped cilantro. Cut a few thin slices of washed and scrubbed lime and place them on the dishes. ENJOY YOUR MEAL!
