Banana jam is a jam that was missing from my collection of jams.
Wash your jars, then sterilize them by immersing them in boiling water.
Mash the ripe bananas, add the sugar, the split vanilla pod, the cinnamon, and the juice of the two lemons. Mix well and let it marinate overnight in the fridge.
The next day, cook the jam over low heat, stirring frequently until a brown color is achieved. Cover to avoid splatters.
Let it cook uncovered for about 30 minutes over low heat. Keep an eye on the jam; it should not stick to the pot.
To finish, fill the sterilized jars. Close them, turn them upside down, and let them cool.
