Heat a little olive oil in a skillet and grill the slices of bread on one side only. Set aside.
Roughly blend the avocado with fresh peas, basil, and lemon juice. Season with flaked sea salt.
Cut the cheese into 8 slices and then cut each slice in half. Cut the hard-boiled eggs into quarters. Thinly slice the green onion.
Spread some pea avocado puree on a slice of toasted bread, place 2 pieces of hard-boiled egg, 2 half slices of cheese, and a bit of green onion.
To finish, season with a bit of pepper and garnish with basil.
