A donut recipe brought to you by a Tunisian-inspired restaurant located in Paris.

Ingredients
 500 flour
 60 sugar
 ½ cube of fresh baker's yeast (or 1 packet of dry baker's yeast)
 1 egg yolk
 1 pinch salt
 10 olive oil
 30 warm water

In a bowl, mix the yeast and sugar with about 300 ml of warm water and let it sit for 20 minutes.

In a stand mixer (with the whisk attachment)

Pour the flour (400g) and mix on low speed for ten minutes to soften the flour, set aside the remaining 100g. Add the yeast mixture.

Increase the speed and knead for ten minutes (medium speed). Stop the mixer and let the dough rise for 20 minutes. After that, add the egg yolk, olive oil, and a pinch of salt. Mix again at medium speed for 5 minutes.

Stop again and finish adding the remaining 100 g of flour, incorporating a little water if necessary to obtain a smooth dough that is not too firm and very sticky to the fingers.

Once you achieve this result, let the dough rest again in a covered bowl. Then, in a frying pan, add vegetable oil: the dough balls should be submerged.

To make the doughnuts, you need to have another bowl nearby with cold water to dip your clean hands in so that the dough doesn't stick to your fingers!

Shape the doughnuts and fry them in oil. Remove them and sprinkle with sugar or powdered sugar. They are ready to be enjoyed!
