What to do with leftover buckwheat crepes? Make small, crispy, and rich chips for your next appetizer. Preferably using leftover homemade crepes. If not, buy them at a market stall. At the very least, you can find them in the refrigerated section of your supermarket.

 4 Buckwheat pancakes
 50 Semi-salted butter
 Freshly ground pepper

After cooking your buckwheat pancakes on both sides, spread butter on each side. Season with pepper. Continue cooking until they are well toasted.

Place the patties on a plate, putting a sheet of absorbent paper between each of them.

Continue to dry the cakes in the oven for 1 hour at 100° (thermostat 3), on baking paper. This drying time should be adjusted based on whether the cakes are already more or less crispy: homemade cakes are thicker, as there is no professional tool to make them ultra-thin.

To finish, when they are dry enough, break the cookies into small pieces and store them in a tin.
