Slice the tomato and the red onion into thin rounds.
Wash and dry the salad leaves.
Heat the olive oil in a pan over medium heat.
Brown the breaded chicken cutlets for 2 minutes on each side. Season with salt and pepper. Cut the breaded chicken cutlets in half.
Place a bit of salad, a few slices of tomato, and onion on each half. Top with the second half and secure it with a toothpick to hold everything together like a club sandwich.
To finish, serve immediately with a small salad and an herb vinaigrette.
