Perfect for appetizers, you will love these sweet potato sesame croquettes.
Peel the sweet potato and the potatoes, cut them into large cubes, then cook in salted boiling water until tender. Drain and mash them.
Place the puree in a saucepan over low heat with the butter and dry it out for about ten minutes. Add a little cumin, the flour, and the breadcrumbs, and mix well. Season with salt and pepper. Allow to cool in the refrigerator for 1 hour.
Pour the flour into a first plate, beat the egg with a fork in a second deep plate, and pour the sesame seeds into a third plate.
Dust your hands with flour, then form balls with the mixture. Quickly dip them in the egg, then in the sesame seeds. Lightly flatten them on top.
To finish, heat the beef white in a fryer at 160°C. Cook the croquettes in batches of 4 for 10 minutes. Drain them and place them on a paper towel.
