 2 Zucchini
 1 Flour
 1 clove Garlic
 1 Egg
 1 AOP Ossau Iraty
 Salt
 Pepper

Start by grating the zucchinis with the skin on and placing them in a strainer to drain (squeeze the grated zucchinis well to extract as much water as possible).

Once the zucchini is well drained, place it in a mixing bowl. Add the flour, the peeled and finely chopped garlic clove, the beaten egg, and the grated cheese. Generously season with salt and pepper, and mix well.

Heat the olive oil in a pan, then drop 2 tablespoons of the mixture, flattening it slightly. Let it cook over medium-low heat for about 2 minutes, then flip the patty and cook for another 1 to 2 minutes.

Heat olive oil in a skillet, then add 2 tablespoons of the mixture, flattening it slightly. Cook over low to medium heat for about 2 minutes, then flip the patty and cook again for 1 to 2 minutes.

Presentation: place all the stacked cakes on a plate and top with a heaping tablespoon of fresh goat cheese.
