Recipe for Pork Tenderloin with Tomato

Discover this recipe, low in fat even though it's pork! The pork loin baked in the oven is tender and fairly quick to prepare aside from the cooking time. It's easy to make and the sauce is really flavorful.

 1 Pork loin
 1 Sliced onion
 200 Sliced button mushrooms
 8 Prune
 2 cloves Garlic
 2 Oregano
 1 Oregano
 1 Chopped basil
 10 White wine
 1 Peeled tomato
 1 Chicken broth
 5 Water

Cooking the pork loin In a Dutch oven, brown the loin with a bit of olive oil and margarine. Once browned, remove it and set aside.

Cooking the vegetables In the juice, melt the sliced onion, then add the sliced mushrooms as well.

Add the prunes, then deglaze with the white wine.

Add the "previously chopped" tomatoes, the two crushed garlic cloves, the herbs, and finally, the chicken broth. Stir everything together.

Add the pork loin. Next, add the loin and bring to a boil.

Oven cooking Once boiling, bake for about 45 minutes depending on the thickness of the loin at 190°C.

    Quick, simple, and really good! I would gladly make it again! A small note for those who, like me, don’t have a convection oven: slice it before baking, and bake for about 1 hour instead of 45 minutes. Thank you for the recipe.

    Test Recipe A simple recipe with a nice flavor. I used more prunes than indicated. After being out longer than expected, my meat stayed in the oven at 180°C for 1.5 hours, and it was very tender. I served it with couscous. The whole family enjoyed it!!

    Great recipe Thank you for this recipe that I cooked with potatoes. It's a delicious and balanced dish. I didn't have a casserole dish that could go in the oven, so I browned my meat in a regular pot, prepared my ingredients (onion...) in the same pot, then transferred everything to a baking dish, popped it in the oven, and it was perfect. My suggestion: Nothing to complain about, it's perfect as is!

    Quick and excellent. To allow the juice to slightly caramelize, do not cover the pot during cooking in the oven.
