Peel the red onion, then slice it, just like the mushrooms.
Heat a large pan, add the butter, and cook the chopped red onion over medium heat.
Add the mushrooms, thyme, and bay leaf.
Dilute the tomato concentrate in the vegetable broth, then drizzle over the mushrooms.
Continue cooking for about ten minutes.
Meanwhile, cook the tagliatelle.
At the end of cooking the mushrooms, drizzle them with lemon juice, then adjust the seasoning with salt and pepper to your taste.
Divide the tagliatelle among deep plates, generously top with Stroganoff-style mushrooms, and garnish with a bit of fresh herbs.
To finish Tips: For a stronger flavor, replace the vegetable broth with beef broth. To make it a complete dish, you can add a poached egg.
