Mexican Casserole with beef, rice, black beans, and cheddar, a flavorful and comforting dish, perfect for family dinners.
Meat preparation In a large skillet, sauté the onion and bell pepper in a little oil until they are tender. Add the ground beef and cook until it is browned. Add the taco seasoning mix.
Add the vegetables. Add the black beans, corn, and crushed tomatoes. Mix well and let simmer for 10 minutes.
Assemble the casserole. Preheat the oven to 180°C (350°F). In a baking dish, spread the cooked rice. Add the meat and vegetable mixture on top. Sprinkle with grated cheese.
Bake in the oven for 20-25 minutes, until the cheese is melted and golden.
