A healthier alternative to carbonara that has the same textures and a unique taste. Ideal for using up leftover butternut squash that you don’t know what to do with 🙂
Cut your butternut squash into cubes and steam it until it is very soft so that it can be easily blended into a cream.
Meanwhile, cut your smoked tofu into small cubes and your onions, and sauté them in a pan with olive oil. Set aside when they are nicely browned.
Once the squash is cooked, place it in a blender with the cream, pepper, and salt. Blend until you achieve a creamy consistency. If it is not liquid enough and too "mashed," you can add more cream.
Bring a large pot of water to a boil and add your pasta when it is boiling. A little before they are done cooking, drain them and reserve one to two ladles of the cooking water.
To finish, put everything in a large pan to complete the cooking: tofu, onions, butternut cream, pasta, and the remaining cooking water. Sauté for 2 minutes and serve!
