We love this organic veal roast with melting goat cheese.

Ingredients
 1 Organic veal roast weighing between 800 g and 1 kg
 2 Goat cheese
 2 Thyme
 2 Olive oil
 Salt
 Pepper
 2 Tomato

Preheat the oven to 170 °C (around 340 °F).

Cut the cheese and the tomatoes into thick slices.

Heat a large skillet with oil and sear the roast on all sides.

Make deep incisions in the organic veal roast, as if to slice it, and stuff each slit with goat cheese and tomato, alternating between them.

Season the organic veal roast with salt and pepper, sprinkle with crumbled thyme, place it in a dish, and cook for 35 minutes in the oven.
