On my table, directly from the garden, fresh onions, beautiful spinach ... today used for a delicious and truly TASTY pie!!!
Preheat the oven to 180°C (350°F). Roll out the dough while keeping the parchment paper and line the baking dish with it. Refrigerate.
Rinse the spinach under clear water several times. Dry them. Peel and finely chop the onion. Peel the clove of garlic and crush it with a garlic press.
Heat a skillet, add olive oil, onion, and garlic, let it cook for 2 or 3 minutes while stirring, then add the spinach (just until they are wilted), season with salt and pepper, and set aside.
In a mixing bowl, combine fresh goat cheese with cream, add the eggs, and mix again. Spread the spinach over the tart base. Pour the egg, cream, and goat cheese mixture on top. Slice rounds of goat cheese and place them on the tart (for my 24 cm square mold, I needed 9).
Sprinkle with pine nuts. Bake the spinach and goat cheese tart for about 40 minutes. It should be nicely golden on top.
To finish, remove the tart from the oven and let it cool for a few minutes before unmolding. Serve warm. ENJOY YOUR MEAL!
