For Valentine's Day, I wanted to make a salad that reminds me of those first dates... Here, they are in the woods with the first shoots and wild herbs.
Wash the young shoots, herbs, and wild flowers collected from the woods, and dry them.
Wash the chives and chop them. Mince the shallot. Peel the shrimp and keep only the tails.
Cut the slice of foie gras into 1 cm cubes. Place the young shoots, herbs, and wildflowers on each plate.
Sprinkle the chopped shallot and arrange the shrimp tails, slices of smoked duck, and cubes of foie gras harmoniously.
To finish, drizzle with hazelnut oil and balsamic vinegar. Season with salt and pepper.
