Warm white asparagus, Parmesan, and cured meat, a perfect spring starter.
Peel the asparagus, steam the asparagus (100°/35 min).
Roast the asparagus for a few minutes in canola oil.
Roast the nuts.
Make strips of Parmesan from a block.
Arrange the asparagus on the plate, place half a slice of cured meat on each plate, add two strips of cheese, and two walnut halves.
To finish, drizzle with parmesan sauce (Melt parmesan and cream).
