This recipe for sweet potato fish and chips is provided by a brand. Photo credit: E. Reithler.
Drain the tuna fillets and reserve the cooking liquid. Wash, peel, and cut the sweet potatoes into thick fries.
In a deep plate, pour the flour, in another one the breadcrumbs. Beat an egg in a third deep plate.
Roll the fillets in flour, then in beaten egg, and finally in breadcrumbs.
Make a mayonnaise, add the cooking juice from the tuna and a hint of chili powder.
Fry the sweet potatoes in a fryer at 180° for 9 minutes.
In a hot non-stick pan, pour in 3 tablespoons of sunflower oil. Sear the tuna fillets on all sides. Transfer to paper towels.
Check the cooking of the sweet potatoes, drain them on a paper towel, and lightly salt.
To finish, arrange the fish and chips on a warm plate and serve with a small pot of your lemon mayonnaise. Enjoy!
