 2 Pink Lady Apples
 4 Eviscerated mackerel
 1 Fresh ginger
 1 stick Lemongrass
 1 Small red pepper
 3 Sesame oil
 1 Salty soy sauce
 1 Lime
 2 Black sesame seeds
  Coriander
 Flower of salt
 Pepper

Preheat the oven to 180°C. Zest the lemon and then juice it.

Peel the ginger and chop it. Thinly slice the chili, green onion, and lemongrass. In a bowl, mix the soy sauce with the lemon juice and sesame oil.

Then add the lemongrass, chili, and ginger. Mix everything together, season with salt and pepper. Rinse and core the apples, then slice them into thin pieces.

Cut 4 large squares of baking paper. Place a few slices of apples on each sheet, then a mackerel, and generously brush the fish with the sauce.

Sprinkle with sesame seeds. Close each sheet in a pouch with string and bake for 20 minutes.

To finish, take the packets out of the oven and sprinkle with chopped cilantro. Serve immediately.
