The chef presents an original way to enjoy cauliflower: whole and slowly roasted in its spice juice. A tender and well-flavored cauliflower that will make a delicious side dish for meat or fish dishes! This roasted cauliflower recipe is provided by the chef for a luxury hotel.
Prepare the marinade in a mixing bowl by combining all the ingredients.
Brush the cauliflower with the marinade.
Cook the cauliflower in a parcel for 75 minutes at 160°C. Check the doneness.
Grate the ginger, dice the onions, and add all the ingredients for the coriander sauce except for the mayonnaise.
Mix all the ingredients in a blender.
Blend until the mixture becomes homogeneous, then add the mayonnaise and whisk. Set aside in the fridge.
At the bottom of a shallow dish, place the coriander sauce, then add the still warm cauliflower.
To finish, sprinkle with sesame seeds and coriander.
