This recipe for chickpea flour waffles with chocolate chips is extracted from a book on legumes.
In a bowl, pour in the soy drink and lemon juice. Let it sit for 10 minutes to make a "buttermilk." The mixture will curdle, it's normal! Mix well.
In a large bowl, mix the chickpea flour, baking powder, and sea salt.
In the vegan buttermilk, add the grape seed oil, maple syrup, and vanilla.
Pour the wet ingredients over the dry ingredients and mix roughly.
Add the chocolate chips and mix roughly.
In a well-heated and greased waffle maker, pour about 60 ml (1/4 cup) of the waffle batter. Cook for 4 minutes or until the steam stops escaping from the waffle maker and the waffle is nicely golden brown.
Oil the waffle maker again as needed and repeat the process. Enjoy immediately with the chosen toppings.
