Today I suggest Greek chicken skewers that I prepared with a yogurt marinade (there are several versions). I cooked them on the barbecue, but you can also bake them in the oven. The meat is very tender and juicy, not dry at all. It is well flavored, just the right amount. I used the remaining marinade as a sauce. It pairs wonderfully with the meat, fries, and tomatoes that I served alongside.
Cut the chicken into pieces about 3 cm in size.
In a large bowl, mix all the marinade ingredients.
Place the pieces of chicken in a large bowl and add 4 tablespoons of marinade. Mix well to coat them completely.
Cover the bowl with the meat and let it marinate in the fridge for at least 2 hours and up to the whole night (the whole night for me). Do the same with the remaining marinade, which will serve as a sauce.
Thread the meat onto skewers. If they are wooden, be sure to soak them in water for 30 minutes beforehand to moisten them well.
Grill on the barbecue on all sides.
To finish, serve immediately with the remaining marinade, fries (baked for me), and vegetables.
