Today I propose a giant cheese pancake, very easy and quick to make. Perfect for breakfast, to change from toast and pastries, or for a snack.
In a bowl, mix the egg, sugar, salt, and milk with a whisk.
Add the flour and baking powder and mix until you achieve a smooth texture.
Add the grated cheese and mix again to incorporate.
Heat a large non-stick skillet and brush with 1 tablespoon of oil. Then lower the heat to medium.
Pour the batter into the pan and spread it out like a large pancake.
Cover the skillet and cook the pancake for 5-7 minutes over medium heat, until the bottom is golden and the surface starts to change color.
Carefully flip the pancake, cover the skillet again, and continue cooking for 2-3 minutes, until the other side is golden as well.
To finish, serve immediately, as is or with plain yogurt or a little cream.
