Cheese Börek Recipe

I suddenly craved to enjoy some delicious Turkish mezes. So I decided on cheese böreks, and I was right because my little family loved them. They disappeared super quickly; I only managed to eat 3 even though there were about twenty!

 1 Parsley
 400 Feta cheese
 2 Egg
 Frying oil
 Pepper

Wash and dry the parsley, then chop it finely.

Crush the feta in a bowl using a fork. Break the eggs and separate the whites from the yolks. Place the whites in a bowl and add the yolks to the feta. Mix, then add the parsley and pepper. Mix again.

Roll out the filo sheets. If they are in the shape of discs, cut them into 8 to form 8 triangles. If they are rectangular, cut them in half lengthwise and then cut each half-rectangle into 3 to create strips that are 5 to 10 cm wide.

Place a bit of filling parallel to the base of the triangle or strip, then roll twice to cover the filling.

Fold the two sides of the triangle or strip over the small roll to seal the ends. Then continue to roll the cigar towards the end of the dough. Before the last turn, spread a bit of egg white to stick the roll. Repeat the last three steps until the filling is used up.

To finish, when all the rolls have been made, heat the oil. Place the rolls in one by one. Turn them so that they are golden on all sides. Remove them and place them on paper towels.
