A delicious recipe for muffins with prosciutto, spinach, and goat cheese.
Preheat the gas oven to 190°C and prepare a muffin pan for 12 by placing paper liners in the designated cavities.
Fry the squares of ham for 1 to 2 minutes until crispy and dry, then set aside. Sift the flour, baking powder, baking soda, and a pinch of salt into a bowl, and add the ham, ground pepper, Parmesan, spinach, and basil. In another bowl, mix the milk, beaten egg, and melted butter, and slowly pour the mixture over the previously obtained dry ingredients.
Divide the mixture among the muffin tins and bake for 20-25 minutes until they rise completely and reach a golden brown color. Then let cool on a rack. Cut the muffins in half and spread with goat cheese. Add arugula leaves, a bit of black pepper, and serve with a slice of delicious ham.
To finish, chef's advice: add a tablespoon of hot water to the mixture before pouring it into the muffin molds to start the cooking process.
