 2 Organic lamb fillet
 2 Green apple
 1 Lemon
 80 Hazelnut
 50 Butter
 1 Sunflower oil
 2 Hazelnut oil
 Salt and freshly ground pepper

Cut the apples, with their skin, into small sticks and set them aside in lemon juice to prevent them from browning.

Cut the organic lamb fillets into pieces, thick slices of 3 centimeters.

Heat a skillet with the butter, brown the nuts for a few minutes, and roughly chop them.

Wipe the pan, heat it with sunflower oil, sear the organic lamb fillets over high heat, cook for 5 to 6 minutes for medium rare, turning them halfway through, and season with salt and pepper.

To finish, serve the organic lamb chops garnished with nuts and apple sticks drizzled with hazelnut oil and accompanied by a celery root puree.
