Mix the sesame oil, peanut oil, rice vinegar, sesame paste, and chopped fresh herbs in a bowl. Set aside.
Rinse your endives, remove the ends, cut them into 4 lengthwise, and slice them finely. Cut the cucumber into thin slices and grate the carrots.
In a bowl, mix the endives with the cucumber and carrots. Sprinkle with peanut powder and toasted sesame.
