I had some small balls of mozzarella that I wanted to use to fill some doughnuts. In the end, I chose potato and cheese balls. Easy to make, they are perfect for a dinner appetizer.
Boil the potatoes in water with their skins. Let them cool down, then peel them.
In a mixing bowl, mash the potatoes using a potato masher.
Add the grated cheese and mix well.
Add the eggs, salt, pepper, and nutmeg and mix well again.
Finally, add the flour and mix to incorporate it.
Put breadcrumbs on a plate.
With slightly damp hands, shape a ball, flatten it, place a ball of cheese in the center, and seal the edges to completely cover it. Roll it generously in breadcrumbs.
Prepare the other meatballs in this way.
Cook them in a hot oil bath until they are golden.
