Chickpeas in the Spanish style, a delicious way to cook chickpeas. It's a legume that I don't usually cook aside from in couscous or to make hummus. In this recipe, they are combined with sausage, providing a delightful journey for the taste buds.
In a pan, heat the olive oil. Grill the sausages on all sides. Then remove the sausages and set them aside.
Add the minced onion, pressed garlic cloves, chopped tomatoes, and the juice.
Add the chickpeas and paprika, salt, pepper, and a pinch of chili powder, a sprig of thyme, and 2 bay leaves. If necessary, add a little water and simmer for about ten minutes. Mix the breadcrumbs with the parsley mixture.
Finally, transfer the contents of the pan (if it is not oven-safe) into an oven-safe dish. Add the breadcrumb mixture on top of the dish. Bake until golden and serve hot.
