Indulge in this refreshing summer salad. It consists of marinated zucchini, slices of cheese, pumpkin seeds, and mint.
Wash and slice the zucchini into thin slices using a peeler or a mandoline.
Squeeze the lemon and add the juice to the zucchini, the oil, a pinch of salt, and two turns of the pepper mill, as well as the mint leaves.
Let marinate in the refrigerator for at least 1 hour.
Before serving, use a vegetable peeler to make nice slices of aged cheese and add the pumpkin seeds.
To finish, serve very cold.
