This Mac & Cheese recipe is taken from a book on Burgers. Simple and comforting, enjoy making this new dish at home!

Ingredients
 50 Gouda
 50 Parmesan
 150 Cheddar
 100 Emmental cheese
 40 Butter
 40 Flour
 20 Liquid cream
 40 Milk
 1 dash Olive oil
 Salt, pepper, nutmeg

Cook the pasta according to the package instructions. Once drained, drizzle with a bit of olive oil to prevent it from sticking together.

Grate the gouda, parmesan, and cheddar into a mixing bowl and mix well. Grate the emmental separately.

In a large saucepan over low heat, melt the butter cut into pieces, then add the flour. Stir until the mixture thickens well: this is called a roux.

Then add the cream and milk gradually, always on low heat, and stir well. The mixture will thicken gradually, which takes about 3 minutes. Season with salt, pepper, and nutmeg.

Add the mixture of grated cheeses, stir well until everything is melted, and remove the pot from the heat. You will have a variation of Mornay sauce.

Preheat the oven to 190 °C. Place the macaroni in a baking dish, pour the mixture on top, and mix well.

Sprinkle grated cheese on top and bake for 15 to 20 minutes.
