The famous bakery specialty of Moroccan origin: Baghrir or pancakes with a thousand holes (even if they haven't been counted)! Here is an easy and quick recipe. It is prepared without fresh baker's yeast as dry yeast is sufficient.

 250 Fine semolina
 120 Flour
 450 Lukewarm water
 ½ Salt
 7 Baking powder
 2 Baker's yeast
 1 Sugar

Preparation of the batter In a blender, combine semolina, flour, yeast, sugar, salt, and warm water. Blend for 5 minutes.

Rest Pour the batter into a bowl, cover it, and let it rest for an hour.

Cooking the thousand holes pancakes In a non-stick pan, pour a small ladle of batter and let cook over medium heat until holes form on the surface of the pancake.

Tasting Serve the baghrirs hot accompanied by honey, butter, argan oil, and jam.

    Hello everyone, I confirm that Baghrir pancakes work throughout North Africa... It is true that Moroccan cuisine is good and refined and is often highlighted, but good for Morocco, as it has the tourist openness that Algeria does not have. I would find it reasonable for those who promote traditional dishes like this one to consider it as North African rather than simply Moroccan, as this is misleading information. But you, my Moroccan friends, please be humble and acknowledge this... That said, these pancakes are delicious, and preparing them in a blender is ideal. On the other hand, I cook them on my crepe maker which results in mini Baghrir that are excellent. A blini pan would work well too.

    I know well about "thousand holes" pancakes and they are a delight. Thicker than our pancakes but so good! With sugar, honey, maple syrup, melted chocolate... mmmmm I can't get enough!
