 2 Quail
 1 Olive oil
 1 Shallot
 1 Honey
 1 Chicken broth
 1 pinch Salt
 1 pinch Pepper
Directions

Peel and slice the shallot. Seed and wash the grapes.

In a pot, sauté the shallot in hot oil until golden.

Place the quails in the pot and brown on all 4 sides.

Moisten with the glass of poultry broth, then stir in the honey, season with salt and pepper. Cover and let simmer on low heat for 20 minutes. About 5 to 10 minutes before the end of cooking, add the raisins that have been rinsed under cold water.

To finish, at the end of cooking, turn up the heat to reduce the sauce if needed.

    Not bad, I added a tiny sprig of thyme, a bay leaf, a clove, a star anise, and a pinch of cinnamon. I thickened the sauce with a bit of flour mixed in a little water. Delicious and well-balanced in its flavor profile.

    Quails with grapes Very easy to make and very good. However, I only used a teaspoon of honey, not everyone likes sweet and savory. I added the grapes as soon as the quails were cooked, a delight... My suggestion: What I regret about recipes is that they never indicate what to serve them with. For this recipe, I served it with a potato gratin, my guests loved it.

    Hello, I forgot the main thing, "the raisins," but I think the clever ones will understand that they need to be added at the end of cooking. My suggestion: About 5 to 10 minutes before the end of cooking, add the raisins that have been rinsed under fresh water.
