This recipe for ham and cheese croissants is presented in Sophie’s kitchen.
Prepare the béchamel sauce: in a heavy-bottomed saucepan, melt the butter.
Add the flour and mix vigorously with a spatula to obtain a roux.
Pour the milk in and continue cooking over medium heat, stirring constantly.
Season with salt and pepper and add a bit of nutmeg. When the mixture starts to thicken well, remove it from the heat.
Cut the cheese into slices. Cut the croissants in half lengthwise up to ¾. Fill them with béchamel sauce. Add the ham and cheese.
Bake for 10 minutes in a preheated oven at 160°C. Serve hot with a green salad.
