Recipe for Mustard Marinated Pork Tenderloin Skewers

Spicy skewers that can be made with pork or veal tenderloin. You can vary the ingredients by substituting the bacon with chicken livers, for example. Serve with potatoes cooked in barbecue ashes or pilaf rice.

Skewers ingredients
 1 Red bell pepper
 3 Medium tomato
 200 Paris mushrooms
 3 Canned pineapple
For the marinade
 15 Grape seed oil or olive oil
 3 Old-fashioned mustard
 2 Salt
 3 Pepper
 3 Provençal herbs
 2 Chopped parsley

Preparation of the marinade Gather all the marinade ingredients in a bowl, mix well, then set aside.

Preparation of the skewers Cut the tenderloin into cubes of about 4 cm on each side Place the meat in a dish and pour the marinade over it, mixing everything well; set aside in the refrigerator Cut the half bell pepper into squares Clean and cut the mushrooms into pieces Cut the piece of bacon into thick lardons Cut the pineapple slices into 12 pieces Cut the tomatoes into pieces

Assemble the skewers by alternating meats and vegetables (approximately 5 pieces of tenderloin per skewer). Finish by brushing the skewers with the remaining marinade. Place the skewers on the barbecue.
