Preparation of the ingredients Pour half of the salt into a mixing bowl. Place the duck breast on top and sprinkle the remaining salt over it, then cover with plastic wrap.
Let it rest and marinate for 12 to 18 hours in the refrigerator, depending on the thickness of the duck breast.
Afterward, wipe with a cloth to remove any pieces of salt adhering.
