Here is the recipe for mimosa eggs with tuna and wasabi. The recipe is original, simple, and quick to make. And ultra delicious!
Cook the eggs in boiling water for 10 minutes, then stop the cooking process by plunging them into cold water. Peel the eggs and set aside.
Chop the chives.
Mix the egg yolk and mustard.
Gradually add the oil until the mayonnaise thickens.
Add a few drops of vinegar, wasabi, and mustard. Mix. Season with salt and pepper.
Cut the eggs in half and remove the yolks.
Mix 3/4 of the egg yolks with the mayonnaise and chives.
To finish, pour into a piping bag with the egg whites. Sprinkle with the remaining roughly crushed egg yolks, tuna, and a drizzle of oil.
