Here is a simple, easy, and quick recipe for an invisible apple cake.
Wash the lemons, grate the zest of one and squeeze the juice from both. Peel and core the apples, then slice them thinly using a mandoline. Place the apple slices in a bowl and pour the lemon juice over them. Set aside.
In another bowl, beat the eggs with the oil, milk, sugar, and lemon zest. Add the flour and baking powder and mix well.
Pour the batter over the apples and gently fold with a spatula.
To finish, butter a 20 cm loaf pan. Pour in the mixture and bake for 45 minutes in a preheated oven at 180°C. Allow to cool before removing from the pan. Enjoy plain or with a bit of caramel.
