Green pepper sauce is not only reserved for red meat, but goes very well with fish, including cod.
Preparation of the sauce: peel and finely chop the shallot. Crush the green peppercorns. Melt 20 g of butter in a saucepan, sauté the shallot, then add dry white wine and the crushed green peppercorns. Let it reduce slightly. Add the cream, allow the sauce to reduce, then pour in the brandy. If necessary, let the sauce thicken a bit. Taste, and add salt and pepper if needed.
During the preparation of the sauce, cook the cod fillets in 20 g of butter in a pan for about 3 to 4 minutes on each side (depending on their thickness). Season with salt and pepper.
To finish, plate immediately on warmed dishes, place a piece of fish, and top with green pepper sauce. Serve with steamed potatoes or a portion of rice. Serve immediately and enjoy.
