For the rabbit stir-fry, sauté the pieces of rabbit in a pot for 2 minutes on each side in olive oil. Add the sliced onions. Deglaze with chicken broth; reduce by half, add coconut milk and let simmer for about 10 minutes with the lemongrass stick.
For the finishing touch, add the spinach and serve the dish directly on the table.
Chef's tip: you can serve this dish with white rice.
