Remove the rind from the cheese and cut it into fairly thick rectangles.
Finely chop all the herbs, then mix.
In a shallow bowl, mix the breadcrumbs and chopped herbs. Combine well, then season with salt and pepper.
Place the beaten eggs in a shallow dish.
Dip each rectangle of cheese successively in the beaten egg, then in the herb breadcrumbs.
Repeat the process to ensure the cubes are well coated.
Heat a volume of oil, then fry the breaded cheese cubes for a few minutes.
To finish, place on a paper towel, then serve the cubes while still warm, accompanied by a salad, for example.
