Can be made with all types of white fish.
Preheat the oven to 180°C.
In the meantime, pour a good amount of olive oil into a baking dish. Place the fillet in it, turn it over, add a splash of white wine, and season lightly with salt and pepper.
Cook the rice.
Put the cream in a saucepan over heat, gradually add the butter while whisking, then add white wine and lemon.
When the oven is hot, bake for about 15 to 20 minutes, monitoring the cooking. Meanwhile, continue to whip the cream until it thickens.
Dry roast the almonds.
To finish, when the fish is golden, serve it topped with rice and fish sauce, and sprinkle with almonds.
