Zucchini Falafel Recipe

These zucchini falafels are really very easy to make. I had an open can of chickpeas left, and aside from making hummus, I wanted to find something else. That's when I thought of falafels, but with zucchini.

Ingredients
 150 Zucchini
 250 Chickpea
 1 clove Garlic
 3 Flour
 1 pinch Salt
 1 Olive oil
 1 Greek yogurt
 A little dill

Wash and grate the zucchini. Blend the chickpeas. Place everything in a mixing bowl. Add the grated garlic and grated zucchini. Mix well. Add the flour and salt. Mix again until you obtain a homogeneous dough.

To finish, form small balls with your hands and place them on a plate. Pour a little oil into a pan. Brown the falafels on both sides over low heat. You can also bake them in the oven at 180°C for 15 minutes on each side. Serve with a yogurt sauce, flavored with lemon and dill.
