Zucchini Caviar Recipe

Delicious I make this recipe every summer, as an appetizer or a starter. I let it rest in the fridge for a few hours before serving so the flavors can blend. It's a great recipe for using up zucchini from the garden and local produce baskets. Thank you very much for this recipe. My suggestion: Nothing to add, just follow the recipe to the letter. It's perfect as is.

Nadia's Caviar I thoroughly enjoyed it, even though it takes quite a while to make, it's worth it. My suggestion: I will try it with a touch of red pepper puree.

Excellent! But I use twice as many zucchinis as tomatoes.
