Wash and dry the zucchini, then cut them into not-too-thick slices. Sprinkle with salt. Heat a little vegetable oil in a pan, then fry the zucchini slices on both sides. Place them on absorbent paper for a moment, then mash them with a fork. Set aside. Cut the tomatoes in half and grate them into a pot to make tomato puree. Add garlic, parsley, cumin, paprika, pepper, salt, and olive oil. Mix the sauce and let it cook for 10 to 15 minutes.
