Enjoy this zucchini quiche with caramelized red onions and feta cheese. Do you like quiches? I do! It's easy to make, quick, and so delicious! You can enjoy them warm, cold, as a starter, as a main dish, or as an appetizer... any occasion is a good one!
Wash and dice the zucchini into small cubes, sauté them in 2 tablespoons of olive oil in a pan for 15 minutes over medium heat, stirring occasionally, then season with salt and pepper.
Peel and slice the red onions, then sauté them in 2 tablespoons of olive oil for 5 minutes. Add the balsamic cream, stir, and let it simmer for 10 minutes over medium heat, covered.
Preheat the oven to 180°C. In a bowl, whisk the eggs together with the egg yolks, add the milk, the cream, season with salt and pepper, and whisk again.
Roll out the pastry in a baking dish.
Pour the savory custard mixture over the dough, add the diced zucchini and the caramelized onions.
Cover with crumbled feta.
Bake for 35 minutes.
To finish, at the moment of serving, sprinkle the quiche with mint leaves.
