Despite appearances, it is very easy to make and very indulgent! It's a yogurt cake with chocolate chips covered in whipped milk chocolate ganache. You need to prepare two and then cut out the ears from the second cake, which will also serve as the base. So I’ll provide the quantities for 2 standard round cakes. You can then decorate your bunny with candies, chocolate buttons, or sticks.
Prepare your ganache first as it needs to rest in the fridge for 2 hours. Heat the cream. Once it reaches a boil, remove from the heat and pour over the chopped chocolate in a bowl. Let rest for 5 minutes, then add the powdered gelling agent and whisk until smooth. Place in the fridge.
Prepare the yogurt cakes. Pour the yogurts into a bowl and add in the following order while stirring well with a wooden spoon: the sugars, the eggs one by one, the flour, the baking powder, and the oil, then, add the chocolate chips. Divide the batter in half and pour evenly into two pre-greased and floured round molds. Bake for 30 to 35 minutes at 180 degrees, then let cool on a rack. The cakes should be completely cool before covering them with ganache.
Take the ganache out of the fridge and then whip it with a mixer to aerate it. Place the first cake on the serving table (I placed parchment paper underneath) to create the head. Then trim both ends of the second cake to create the ears, which you will then place on the head.
To finish, with the remaining second part, create the body of the rabbit and place it under the head. Generously cover each part with ganache and decorate to your taste. Enjoy immediately.
